FRESH FOR THE SEASON
Here’s a guide to what’s fresh in fall and winter: acorn squash, apples, Belgian endive, bok choy, broccoli, Brussels sprouts, butternut squash, cauliflower, celery root, Chayote squash, cherimoya, coconuts, cranberries, diakon radish, garlic, ginger, grapes, guava, huckleberries, kohlrabi, kumquats, mushrooms, parsnips, pear, persimmons, pineapple, pomegranate, pumpkin, quince, rutabagas, sweet potatoes, Swiss chard, turnips, winter squash, and yams.

My dear friends,
I never thought I would find a place as bright and involved in the holiday season as my birth province of Alsace, France. I did … New York City. Besides the city, I discovered a whole culture that starts its preparation for the end of the year with Thanksgiving. What a beautiful holiday – and a great time for a chef to create exquisite meals.
Working for clients with different backgrounds has helped me understand that in many cultures and religious beliefs, the end of the year is a celebration of light. Light in the darkest season. Light in the coldest season. Light to bring warmth to our cities, homes, hearts, and plates. Everything around us covers itself with light and the desire to cherish what we have with the ones we love.
Throughout the year, I have nurtured my clients with food. Every step of the way is a labor of love for me – from the moment I select the ingredients to the moment my clients enjoy the meal.
For some, I have changed the way they look at food: pleasure versus necessity. Understanding versus calculation. As simple as that. Voilà. For others, I have created beautiful and unforgettable moments. But in the end, I did the same thing: shared my love for cooking and entertaining. But none of this could have happened without the participation of you, my clients and friends. You inspired. I created, and I cannot thank you enough for it.
Quintessencia’s Commitment to Quality
As a food "artisan" and an entrepreneur, I am very aware of the changes occurring on our planet. Our growing population and the amount of unneeded waste have their consequences. As I look at the world, I am concerned for future generations.
Although the potential problems we face are huge, the solution lies in the intimacy of our everyday life. Just as an ocean is made up of multitudes of single drops of water, the solution starts with each of us and our understanding of how we relate to the world. Instead of looking at the big picture, we need to go back to the seed.
PAT’S WORLD-FAMOUS BREDELE
The bredele, "small cookies" in the dialect of Alsace, France, are a true holiday tradition.
Since the Middle Ages, these handmade cookies are prepared with the finest ingredients.
In the shape of hearts, stars, moons, bells, they remind us of the magic of the season.
They were even used to decorate the Christmas trees in the 18th and 19th centuries.
Enjoy the taste of the cinnamon, orange, lemon, chocolate, honey cookies and the delicious almond, hazelnut and pecan macaroons.

There are many people who really care. Often, they are acting in silence. You may never hear them, but every day they produce fresh food the way it should be. And without them, I could not create delicious delicacies for you. This is where it all begins. I’m talking about real food, the kind that doesn’t come frozen in a plastic box.
As we move forward, Quintessencia will honor these "real food" companies by developing strong connections with local farmers and supporting environmental organizations.

We have created a special dinner party menu featuring the best of Alsace for the pleasure of you and your guests. Also, bredele, my favorite holiday cookies, and other special treats will be available throughout December.
